International Waffle Day
If I have the choice between pancakes and waffles, I choose waffles! Top them with some butter and a little maple syrup, that is a perfect breakfast.
International Waffle Day, or Våffeldagen, is March 25, 2026. This celebration began in Sweden and is a special day in Lindsborg, KS. This year, March 21st will be a day of hot breakfast waffles to waffle games, songs and more.
Here is my favorite waffle recipe from Sharon Davis, longtime educator for the Home Baking Association. It is made with active dry yeast (do not use rapid rise yeast!) and refrigerated overnight to allow the batter to slowly ferment and develop a sourdough-type flavor. The next morning, heat up the waffle iron and bake the waffles. Leftovers can be frozen for an easy breakfast of toaster waffles.

CRISPY WAFFLES
Ingredients:
1 ¾ cups milk
¼ cup water
¼ cup canola oil or melted butter
3 eggs
1 tsp. salt
2 tbsp. granulated sugar
2 2/3 cups all-purpose flour (may use half whole wheat flour)
2 ¼ tsp. (1 pkg.) active dry yeast
NOTE: Do not use rapid rise yeast!
Directions:
- Combine flour, yeast, sugar and salt in mixing bowl.
- Combine milk, water, and oil or butter; heat to 120 to 130°F.
- Add liquid ingredients to dry mixture; stir by hand or blend on low mixer speed.
- Add eggs. Beat 2 to 3 minutes on medium speed.
- Cover bowl; refrigerate batter several hours or overnight if using yeast.
- When ready to serve, stir down batter. Bake on waffle iron using medium/high heat. Serve hot.
