Whether you call it grazing or snacking, charcuterie boards are an easy way to add a festive flair to your holiday party, or any time of year. Here are some tips for success.
- Food safety is the first and foremost. Start by washing your hands as this is the best defense against foodborne illness. Many foods on a charcuterie board require refrigeration, such as meat, cheese and fresh fruit. Wrap the finished board in plastic wrap and refrigerate until ready to serve. During serving, don’t leave the board at room temperature more than two hours.
- How big of a board to prepare depends on the number of guests expected for the event. Here are some general guidelines from Cook’s Illustrated.
- Meats: 2-3 ounces per person
- Cheeses: 2-3 ounces per person
- Nuts: 2-3 tablespoons per person
- Crackers or bread: 4-6 ounces per person
- Vegetables or pickles: 4-8 ounces per person
- Dips: 1/2 cup per person
- Provide several utensils for guests to select food off the board without direct contact with their hands.
- If transporting the board, use a board with edges to prevent food from slipping off or getting damaged. Wrap it well to prevent contamination.
- Leftovers can be saved by placing them in storage containers or cover small dishes of food, such as dips, with plastic wrap. Store in the refrigerator and use within 1-2 days to prevent food waste.
