Sorghum research published in trade magazine
An article by a team of K-State researchers has been published in the June edition of Food Technology, a monthly trade magazine for the Institute of Food Technologists.
The team includes: Denis Medeiros, professor of human nutrition; Laura Vazquez-Araujo, research assistant professor of human nutrition; and Edgar Chambers IV, distinguished professor of human nutrition. The article, "Sorghum-the forgotten grain," is a synopsis of the health benefits of a common Kansas grain that is often ignored in the U.S. for its potential as a human food source. The idea of the article was to stimulate more human nutrition research into U.S. markets for food products made from sorghum.
