Faculty, Food Safety Research Center present research at school nutrition convention

A group of researchers and faculty representing the department of hospitality management and dietetics and the Center of Excellence for Food Safety Research in Child Nutrition Programs presented research at the School Nutrition Association’s annual national convention this month in Denver.

 

Kevin R. Roberts and Kevin L. Sauer, assistant professors of hospitality management and dietetics in the College of Human Ecology, presented "Avoiding a showdown: Successfully working with your inspector."

 

Along with two professors from Iowa State University, they also presented "Cleaning up their act: Improving food handling behaviors."


Two research poster presentations accepted from the food safety research center were
"Cooling of Tomato Sauce and Chili in School Foodservice Operations" and "Health Inspection Violations in School Foodservice Operations."

 

Deborah Canter, professor of dietetics, presented poster sessions on "A Web-Based Guide for Using School Nutrition Programs as Supervised Practice Sites for Dietetics Students" by Canter, Mary Frances Nettles from the University of Southern Mississippi and Jessica Keller, master’s degree student. Canter also presented "Dietetic Supervised Practice: Win-Win for School Nutrition Programs" with Virginia Webb, a doctoral student; Nettles; and Keller.

 

Also attending from the College of Human Ecology were Jeannie Sneed, head of the department of hospitality management and dietetics; Carol Shanklin, professor and dean of the Graduate School; Kerri Cole, project coordinator of the center; Shangjie Fan and Amber Grisamore, graduate student researchers at the center; and Kathleen Novosel, the center’s undergraduate research scholar.
