K-State Olathe, McPherson County Extension collaborate on food camp this week

K-State Olathe is host to the C3 Food Science Camp (Choice, Change, Challenge), July 23 to 25 for high school students through a partnership with the McPherson County Extension office.

The camp is funded through a grant from Cargill that McPherson County Extension received to conduct youth training.

The camp is teaching 13 high school students about food science with interactive and hands-on curriculum, labs and business tours. Campers are learning about food safety, processing and science throughout the three-day camp experience, including a lab with a senior applications scientist from DuPont Nutrition & Health where they'll learn about the molecular gastronomy of food.

The students will also volunteer at Harvesters Food Bank, visit the Kansas City River Market, Steamboat Arabia, and dine and learn at Oklahoma Joe's BBQ.  

At the conclusion of the camp, students will prepare a Spanish-inspired paella dish with ingredients purchased at the KC River Market. The dish will be served as the final camp meal.
