interests: During 2005-2006, Ms. Douthit is serving as an intern with K-State's Food Safety & Security program and its interdisciplinary program for the historical studies of border security, food safety, and trade policy. As part of her internship, Ms. Douthit is co-authoring with Dr. Justin Kastner an entry regarding food safety standards for The Palgrave Dictionary of Transnational History.
