"Our work centers on finding non-pharmacological (e.g., more financially feasible) means of preventing or treating chronic diseases such as cardiovascular disease, diabetes, and cancer. We use clinical research (studies using human volunteers) to test whether these dietary and lifestyle behaviors alter blood chemicals used to detect or diagnose these disease states. We measure things such as glucose tolerance (diabetes), inflammation (cancer, cardiovascular disease, and diabetes), and body composition (cardiovascular disease and diabetes). One of our unique qualities is that we are one of the few laboratories at Kansas State University conducting clinical research using human volunteers. We want to see if the healthy changes that occur in animals will also occur in humans. This is important since many health claims are made using results from animal-based research, and those results may not necessarily occur in humans."
